This recipe was created by P4 pupils in St Francis’ Primary School in Glasgow as part of the ‘Food for Thought’ campaign. It’s an excellent recipe for anyone who would like to enjoy an oat bar, but can’t eat butter or margarine.

Set the oven to 350 centigrade, 180 farenheight or 160 fan.

Lightly grease a 25cm baking tray.

Peel the bananas and mash in a mixing bowl until they are nearly liquid. Stir in the porridge oats followed by the coconut and fruits.

Put the mixture into the baking tray and push into the corners.

Bake for 30 minutes, or until crisp round the edges, then remove from the oven and when cool, cut into bars.
