Put the porridge oats, chopped bananas, eggs, peanut butter and baking powder into a blender and blend until smooth. Allow to stand for 10 minutes – the batter will thicken slightly.
Heat a small knob of butter over a medium heat in a frying pan. Put a small ladle of the pancake batter into the pan – the mixture will spread out slightly but you might need to spread it a bit further with a spatula. When the underside is golden brown, gently turn over with a spatula to cook the other side.
Serve with some chopped banana, pecans and runny honey, or spread with butter or peanut butter while still warm.
