This simple and delicious porridge recipe was created by Edita from Belfast for the Hamlyns Home Baking competition.

  1. Preheat the oven to 200C/180 Fan/Gas 6
  2. Cut the plums in half, remove the stone and put the plums on a baking tray with the cut side up. Drizzle with 1 tablespoon of the honey and bake for 10-15 min until tender.
  3. Make up your porridge using 40g of porridge oats and 120 fluid ounces of milk, water, or half and half, according to your preference. Edita used milk for a rich, creamy porridge. Bring to the boil and simmer for five minutes.
  4. Top your porridge with the baked plums, then sprinkle with the chopped pistachios, the remaining honey and the delicious juices from the baked plums. Simple, and delicious.
