This simple and delicious porridge recipe was created by Edita from Belfast for the Hamlyns Home Baking competition.
- Preheat the oven to 200C/180 Fan/Gas 6
- Cut the plums in half, remove the stone and put the plums on a baking tray with the cut side up. Drizzle with 1 tablespoon of the honey and bake for 10-15 min until tender.
- Make up your porridge using 40g of porridge oats and 120 fluid ounces of milk, water, or half and half, according to your preference. Edita used milk for a rich, creamy porridge. Bring to the boil and simmer for five minutes.
- Top your porridge with the baked plums, then sprinkle with the chopped pistachios, the remaining honey and the delicious juices from the baked plums. Simple, and delicious.
