• Method

  1. Oil a deep baking dish and turn on the oven to heat at 180C/160C fan/350F/Gas 4.
  2. Mix the oatmeal and flour together in a pan and stir in half the oat milk.
  3. Cook over a low to medium heat, stirring continuously to avoid lumps, until the mixture begins to thicken, then keep adding oat milk until the sauce is a pouring consistency and boils.
  4. Stir in the grated cheese to melt.
  5. Remove from the heat and season to taste with salt, pepper and a little mustard.
  6. Add the pasta and stir through.
  7. Pour into the prepared dish and scatter with the remaining cheese.
  8. Bake for 15 to 20 minutes until browned and bubbling. If the cheese does not brown sufficiently the dish can be crisped under a hot grill for a few minutes.
