• Method

 

  1. First roast the oats. Place a heavy based pan over a moderate heat and put the oats into the pan. ‘Dry roast’ them, turning the oats with a wooden spoon until they go golden brown. You can do this in the oven but it is easier to see what is happening on the hob. Allow the oats to cool before using them.
  2. Toast pumpkinseeds in the same way as the oats but stand back for jumping pumpkinseeds as they pop. Allow the pumpkinseeds to cool.
  3. Break whole bananas slices into four.
  4. Cut the apricots into small pieces.
  5. Put all of the prepared and weighed ingredients into a mixing bowl and use clean hands to mix everything together. It feels great and it will taste even better!
