This recipe was created by Vivian Maeda for the Hamlyns Home Baking competition.

Vivian says as a mum, it’s hard sometimes to sit down and have a proper meal, so she decided to make these┬ádelicious energy boost balls to grab as a pick me up snack in between looking after her toddler. They are healthy and can easily be made in advance. Vivian says that the only issue is that her son really likes it too, and often ends up eating half of them! If you want to share this snack with babies/children, please consult your Health Visitor as this recipe contains nuts.

 

This is a no bake – no hassle recipe.

Simply mix all of the ingredients together, then form into little balls by rolling spoonfuls of the mixture between the palms of your hands.

Depending on the size, the recipe makes between 11-14 balls.

The recipe is dairy free and suitable for vegetarians. If you need to make it vegan then use 4 tbsp maple syrup and 1 tbsp of coconut flakes in place of the honey.
