Heat the oven to 200C (180C fan) 400F, Gas 6. Prepare two muffin trays with paper cases – the recipe makes around 15.
Sift the flour into a bowl with the cinnamon and baking powder. Add the oats, sugar and banana and mix together.
Beat the honey, sunflower oil, milk and egg in the bowl and stir into the flour mix.
Mix together and spoon into the paper cases, filling each one until it is half full. Bake for 15 to 20 minutes untill risen and set.
Enjoy warm dusted with caster sugar, or try serving as a desert with a dollop of ice cream, some sliced banana and some sprinkles!
If you don’t like banana, you can make these with chopped apple instead. Use two apples in place of the bananas.
