• Method

  1. Preheat the oven to 180°C/160˚ fan.
  2. Cream together the avocado and butter until smooth.
  3. Add the oats to a blender or food processor, and blend to a fine, flour-like consistency.
  4. In a bowl, combine the oat flour, sugar, cocoa powder, baking powder and salt.
  5. Mix the wet and dry ingredients together, and stir in any extra ingredients (we used chocolate chips)
  6. Using a tablespoon, scoop the cookies onto a lined baking tray, and use your fingers to flatten the mixture slightly.
  7. Transfer your cookies to the fridge and allow to chill for at least 30 minutes before baking.
  8. Bake cookies in the oven for 10 minutes, and either enjoy while warm or allow to cool for a gooey cookie consistancy.
