• Method

  1. Heat the oven to 180C/160 fan/350F/Gas 4.
  2. Butter the inside of a pie dish or similar baking dish.
  3. Mix the breadcrumbs, oats and cheese, season with salt and pepper and lay in the base of the buttered dish.
  4. Use the back of a spoon to make four hollows in the crumbs. Break an egg into each of the hollows.
  5. Divide the butter into four and place a piece on top of each egg.
  6. Bake in the middle of the oven for 15 to 20 minutes until the eggs are set but the yolks are still runny.
  7. Eat hot from the oven with ‘soldiers’ of toasted bread to dip and tomatoes halved and baked in the oven at the same time as the eggs.
