Preheat oven to 350F, 180C, 160 Fan, Gas 4

Grease an 18 x 28cm baking tin

  1. Mix the oats, ginger and sugar together.
  2. Melt the margarine and syrup, stir into the dry ingredients and spread evenly in the tin.
  3. Bake for 20–30 minutes, then leave to cool in the tin.
  4. For the topping, melt the butter and syrup together.
  5. Stir in the icing sugar and ground ginger, then leave to cool until firm.
  6. Spread over the oatie base, mark with forked lines and leave until the icing is fully set then cut into squares.

 

 

 

This was one of the winning recipes in our ‘Afternoon Treats’ competition, which we ran with the Scottish Women’s Institutes.
