• Method

  1. Heat the oven to 200C/180 fan/400F/Gas 6.
  2. Oil a baking tray approx 30cm x 20 cm
  3. Divide the pastry in half and roll out one piece to line the base of the tray.
  4. Mix the filling ingredients together and spread over the pastry leaving a narrow margin at the edges.
  5. Roll out the second piece of pastry to cover the filling in the tray.
  6. Damp the edges with water, then lift the pastry edges together and press down the edges to seal.
  7. Brush with beaten egg and bake for 20 minutes untill golden.
  8. Cool a little then cut into squares and enjoy hot or cool, or enjoy cold with a picnic.
