Turn on the oven to heat at 200F (180C fan) 400F, Gas 6. Oil a baking tray.

Sift the dry ingredients into a bowl and add the apple and sultanas. Stir in the butter and eggs with enough milk to make a soft elastic dough. Turn onto the middle of the baking tray. Dust with flour and porridge oats and pat out to make a round 2.5cm (1in) deep. Mark with the blade of a knife into 8 wedges.

Bake for 12 to 15 minutes till risen and firm to the touch. Leave to cool on the baking tray and serve while warm cut into wedges with butter.

Cook’s tips

Add mixed fruit, cranberries or chopped pecans instead of sultanas.

A generous pinch each of nutmeg and cinnamon added to the mix adds to the flavour.
